Instant Pots are great for a lot of things, cake not being one of them. With so many cooking functions, there seems to be no end to the delicious meals that can be made in one of the best Instant Pots.

They’re great for slow-cooked tender meats or pressure-cooked curries, but more often than not, we dream of mouth-watering delicacies while thinking about what to cook next in this clever kitchen gadget. let’s see.

An Instant Pot is one of the most versatile kitchen appliances and with an army of fans around the world, thousands of recipes have been created online specifically for this popular multi-cooker. In fact, we’ve had great success cooking everything from mashed potatoes to hard-boiled eggs in the Instant Pot.

When I saw how many cake recipes there were on the Instant Pot website and app, I got to thinking, can you really make a cake in one of these multicookers? Is the Instant Pot the answer to baking for contestants on the Great British Baking Show or, if you’re in the UK, the Great British Bake Off?

How do you bake cakes and cookies in the Instant Pot?

You don’t need an instant pot with an air fryer lid to make the cake, but I suspect you’ll get better results that way. In a classic Instant Pot without air fry capabilities, most cake recipes use the pressure cook function.

Once you have made the cake batter and filled the cake pan, it needs to be covered with foil. This prevents moisture from seeping into the cake and affecting your baking. By filling the cooking pot with water and sitting the cake pan on a trivet, it is kept away from direct heat on the base of the pot and instead cooks gently under pressurized heat.

Most recipes I’ve tried call for a 7-inch/18 cm round cake pan, luckily, I had one that size. However, my 6-quart/6 liter Instant Pot was just big enough for the pan. So while I could ease into it, removing it from the hot steaming pot at the end of cooking was difficult, to say the least.

This involved using several kitchen utensils to try to get it out. When I started this baking adventure, I envisioned an impossibly moist and light cake. After all, if there is no oven, the cake cannot burn or dry out. And it’s true, none of the cakes I made were burnt or too dry, they just had other problems.

First, let me tell you about my most successful creation, the frosted chocolate cake. After following the recipe and pressure cooking for the required 30 minutes it didn’t taste good. The top was a mess and didn’t even seem like there was much rise.

And while it would be a stretch to describe it as a cake, this chocolate treat is actually delicious. It was rich, dense, and fudgy with a delightful brownie texture and a rich chocolate flavor, and I enjoyed every mouthful. But let’s be clear, cakes should be light and fluffy, which they weren’t.

Going into my second bake I was optimistic and after a rich chocolate cake, I landed on a recipe similar to a fresh and light orange olive oil cake. Again, I followed the recipe and pressure cooked it for 35 minutes, but it turned out to be the worst cake ever made in the Instant Pot. It didn’t rise at all and what came out of the pan was very dense, rubbery, and completely inedible.

At this point, I didn’t know what to expect from the third cake. This time I tried one of my all-time favorites, carrot cake, and had high hopes for a delicious bake. At 65 minutes, the baking time for this was double that of the previous two cakes and I wondered if this would be the key to making the perfect cake.

And the finished cake actually rose a lot more than the previous two, it definitely looked like a traditional cake. But sadly it wasn’t the real deal, it was more dense and chewy than carrot cake. I was left wishing I had baked it in the oven instead, for a lighter result.

There aren’t many cookie recipes that don’t require the use of an air fryer lid, but I finally found an oatmeal raisin cookie that was worth a try. Like a cake, it is baked in a foil-covered cake pan using the pressure cook function. The end result looked like a giant cookie, but that’s where the similarities ended. It had the texture of a dry flat cake which although edible, was very disappointing and definitely didn’t feel like a treat.

I’d love to tell you that the Instant Pot is the answer to all your baking woes, but this experience showed me that you can’t make light and fluffy bakes in a pressure cooker. The Instant Pot is a fantastic tool for making lots of delicious dishes, but let’s face it, even Instant Pot fans have to admit that it can’t be good at everything.
